Definition of 'mechanically separated meat'

For the definition of 'mechanically separated meat', the Regulation states that the definition in Regulation 853/2004 (on 'specific hygiene rules for food of animal origin') shall be used for the purposes of the Food Information Regulation. The following is the definition given in that Regulation:

mechanically separated meat’ or 'MSM' means the product obtained by removing meat from flesh-bearing bones after boning or from poultry carcases, using mechanical means resulting in the loss or modification of the muscle fibre structure.
