My research interests are in the area of food protein biochemistry and I have a particular interest in furthering our understanding of the functional properties of cereal proteins with respect to food quality and health. Recent research has focused on the role of puroindolines as determinants of wheat milling quality and in defence against fungal pathogens.

My research applies biophysical and bioanalytical techniques to study biomolecular interactions in solution and at interfaces, including:

  • FTIR spectroscopy
  • Isothermal titration calorimetry
  • Neutron reflectometry and neutron scattering (at ISIS Rutherford Appleton Laboratory and ILL Grenoble)
  • X-ray reflectometry and grazing incidence X-ray diffraction (at Diamond Light Source)

I am currently seconded until 2016 to the post of Director of the BBSRC funded (£3.2M) Food Advanced Training Partnership (see http://www.foodatp.co.uk). I lead the development and delivery to food industry of postgraduate-level skills and research training leading to Masters and Professional Doctorate qualifications. Four core partners are involved in the Food ATP: University of Reading, University of Birmingham, Rothamsted Research, and Leatherhead Food Research.
