Areas of Interest:

The focus of my research is on the production of bioproducts that can be used as functional food ingredients such as, whey proteins and peptides, carotenoids and polyphenols. In addition I am interested in other non-food bioproducts such as, biosurfactants. My research includes the development of novel separation methods and/or processes and the investigation of the mechanisms underpinning the separations. I have also initiated research in the area of nanoencapsulation of food bioactives.

-Fast track awards by 'Food Processing Faraday' (Department for Environment Food and Rural Affairs): awarded twice to fund two MSc projects on 'Production and purification of a biosurfactant' and 'Recovery of astaxanthin using colloidal gas aphrons'

-Research studentships from BBSRC and in collaboration with the food industry on 'Selective separation of the major whey proteins using ion exchange membranes' (in collaboration with Volac Ltd) and 'Development of an integrative process for the production of angiotensin converting enzyme inhibitory peptides from whey using proteolytic mixtures' (in collaboration with Kerry foods)

-Research studentship by the University of Reading and Tate & Lyle on 'Recovery of astaxanthin using colloidal gas aphrons (CGA)'
