Areas of Interest:

The main objective of my research is to understand how complex food matrices behave in the different compartments of the gastrointestinal tract and the impact it has on health (cardiovascular diseases). Particularly, I am interested in lipid digestion and how plant food structures, varying in complexity and degree of processing, impact lipid digestibility and their functionality in the context of lipid and cholesterol metabolism.

I am using a multidisciplinary approach looking at various length scales (macro-, meso- and microscopic levels) and involving a range of in vitro biochemical and biophysical methods as well as in vivo studies.
