This is a curd cutter used for cutting the curd in a vertical direction to facilitate the removal of the whey. This example has 10 vertical steel knives. The knives are fixed by a substantial bar at the top end and there are no enlarged knobs at the bottom. The wooden handle has one groove and is horizontal to the cutter. Use: For cutting the curd in a vertical direction to facilitate the removal of the whey. This item was donated as part of a collection of dairy related objects from the University of Reading Department of Food Science.
