This month's image shows a micelle of the protein casein in a sample of milk from a cow. This high resolution scanning electron microscope image which was captured by Dr Chris Stain in CfAM forms part of the PhD work of Imtiaz Hussain, supervised by Dr Alistair Grandison in the Department of Food and Nutritional Sciences. This image is magnified ½ million times life size. At this level it becomes possible to see the substructures that make up this micelle. Imtiaz is investigating the key structural differences that may exist between milk from cows and milk from domestic buffalos and how such variations are linked to differing processing and product characteristics.
