Highlights of Career
Graduated in 1972 with BSc (1st Class) Chemical Engineering from University
of Birmingham, UK.
Worked in Food Process Development with Spillers Foods, Cambridge (1972
- 1974).
Graduated in 1975 with MSc Food Science from Leeds University, UK.
Worked for Marks and Spencer Ltd as Retail Food Technologist with responsibility
for developing quality products meeting legal requirements in co-operation
with supplying food factories (1976 - 1982).
Joined The University of Reading as Lecturer in 1983; Became specialist
in food law, its enforcement and in aspects of quality assurance in the food
industry.
Whilst working at the University, gained PhD degree with a study of food
law enforcement in the United Kingdom.
Has researched and lectured in Africa and Eastern Europe - in particular,
visits have included Tanzania, Zimbabwe, Hungary and
Romania.
Under the EC Phare Programme, acted as the food law consultant to an agri-food
study of Romania in 1992 which involved several weeks investigating
the structure and activities relating food safety control in Romania.
Acted as consultant to a Southern Africa Development Community (SADC)
Workshop on Strengthening Food Safety and Hygiene Training in the Informal
Food Processing Sector - held in Mauritius in March 1997. The workshop
was part of an EC funded project on the development of training for food security
in Southern Africa.

Control and European Food and Feed Law Review
Member of the Technical and Legislative Committee of the Institute of Food
Science and Technology (UK).
Promoted to Senior Lecturer in Food Regulation in 2001.
In 2004, acted as short-term consultant (Food Law Specialist) to EU funded
programme to support the Food Control Directorate in the Ministry of Agriculture
and Food, Albania. Assisted in the drafting of new food law and related
regulations to assist integration towards future EU membership.
In 2005, worked as a consultant on behalf of the World Health Organisation (African Region) drafting ' Food Safety Guidelines: Practical Approaches for the Development and Drafting of Food Law' providing guidance to coutries in the WHO African Region.
Acted as short-term consultant (2007) to the Saudi Food and Drug Authority assisting in the drafting of an updated food law
Retired from the University in September 2017 but continues to actively provide educational material for students (buth at the University and on-line).
