During the final year of study students partake in the 'New Product Development Module', which aims to bring everything they have learned together. For many students they are able to use their knowledge and experience of Industry that they have gained while on placement.

This is seen by students as an exciting opportunity to get out of the classroom and put the theory into practice and potentially develop the next BIG food product. Students are given a product brief and then in teams have to develop a new food product. Students form product teams and each member is a student from a different 'food' course. This ensures that the teams are balanced and each member is a specialist in his/her area. For example a student studying Food Science with Business will often be best suited to working on the commercial opportunity and marketing strategy for the product. Where the food scientist will detail things such as product safety/hygiene requirement and ingredient specifications.

The students have to complete the whole process from developing a concept and recipe, writing the product specification including production details and hygiene/safety requirements, developing the packaging and outlining the likely marketing strategy. The students are then given the chance to present their products to Industry representatives, who vote, and the winning team is awarded £500.
