Description
This is a cheese mould used for making large cheddar type cheeses. It is a medium sized mould with two hinged pins which when in position hold up the collar. The fixed base has 25 small drainage holes. The follower which rests on top of the collar like a lid has the same number of holes. When the pins are removed the collar sinks down into the mould when pressed. This item was donated as part of a collection od dairy related objects from the University of Reading Department of Food Science.

The two handles are soldered in position. There are two hinged pins which when in position hold up the collar. The fixed base has 25 small drainage holes. The follower which rests on top of the collar like a lid has the same number of holes. When the pins are removed the collar sinks down into the mould when pressed. Use: for making large cheddar type cheeses. A metal plate could be dropped inside to form a base and then a follower placed in the top before pressing.’
